I learned something from my brother-in-law last week that was completely interesting....I learned that it is not that hard to make homemade manicotti shells!
Recipe
2 cups flour
2 eggs
Milk~ enough so that the batter is a very soupy consistency! You make it a lot thinner than your average
pancake batter
Instructions
Heat your pan on the stove top and spray with non-stick spray.
Get the pan nice and hot
Drop two ladels full (in a circular motion) into the pan and spread the mixture evenly so that it cooks evenly
(Size should be a tad larger than a large pancake).
When you are done with this process you should end up with about 6-8 shells.
When you are done spread a mixture of ricotta cheese and parmisano regiano (and a hint of mozzarella)
onto 1/3 of your homemade shell. Place them seam side down in a 9X13 pan.
*Remember before doing this to put a thin layer of your favorite sauce down on the bottom
Top off your shells with a layer of sauce for approximately 25 minutes at 350 degrees.
Top with mozzarella cheese and put back in the oven for a few minutes more until the cheese melts.
